We have excellent working relationships with a host of local lamb farmers who supply native bred lambs which are grazed extensively on hills and fields throughout Northern Ireland. The ewes return to the farms in January before lambing in March. Once lambed they remain outdoors in the summer months on a diet of fresh grass prior to humanely being slaughter. Our lambs have enjoyed the highest degree of animal welfare. Once humanely slaughtered the lamb is then hung on the bone to ensure a succulent tender taste.
